Every cut that leaves our kitchen has spent its final moments over live embers — never gas, never shortcuts. A discipline tempered by patience and read by instinct rather than by timer.
We source whole cuts from a small circle of trusted producers, dry-age them in-house, and finish each one at the exact moment the fire calls for it.
The Signature Cut
A 45-day dry-aged tomahawk, finished over live embers and rested tableside — carved only when the moment is right.
